New barbecue restaurants don't commit to one regional style

All-American barbecue joints are popping up throughout the country offering a variety of options that aren't dependent on one regional style such Mission Barbecue in the Baltimore area, which dishes out North Carolina pulled pork and Texas-style smoked brisket. "I think everyone loves barbecue, and although barbecue is notoriously regionalized in the way people expect it ... right now, people are just looking for great food and familiar food, presented in a way that they can honor the way they like to eat," said Steven Kolow, owner of SlowBones Modern BBQ in Burlington, Mass.
