RD: Next generation of gluten-free foods to focus on health, taste

Future gluten-free products will improve on taste, health and convenience, but food manufacturers increasingly are marketing to an audience beyond people with celiac disease that believes a gluten-free diet has wider health benefits, registered dietitian Rachel Begun told the Academy of Nutrition & Dietetics' Food & Nutrition Conference & Expo. Begun, who has celiac disease, said demand has forced companies to make gluten-free products healthier and more fortified.
