Black Dirt region onions are something special

A 22-square-mile area known as the "Black Dirt" region, about an hour's drive from Manhattan in Orange County, N.Y., is home to some of the most fertile soil in the U.S. Some of the spiciest onions available are grown there because of the soil's high sulfur content, and the plain yellow storage onions that the region produces are exceptional for cooking.
