More restaurants move to mixed-service model

A growing number of restaurant chains have adopted a mix of full- and limited-service concepts, sometimes under one roof, as a way to maximize sales in a tough economy. Chains making the shift include Buffalo Wild Wings, which offers full-service and fast-casual options under one roof, and East Coast Wings & Grill, which is opening quickserve locations in addition to its 15 full-service restaurants.
