Baked goods take coffee chains beyond breakfast

Starbucks' acquisition of bakery chain La Boulange last year has fueled an upgrade of the chain's pastry case, with sandwiches and sweet treats that pair well with coffee throughout the day. Other chains are also paying more attention to baked goods these days, including Caribou Coffee, which works to create familiar favorites with a twist, such as putting a traditional breakfast sausage on a brioche instead of a biscuit, said SVP of marketing and product management Alfredo Martel.
