Winemakers seek barrel alternatives that offer oak cask taste

The wine industry has been using barrel alternatives, such as staves, chips and dust, to offer customers an oak-influenced flavor profile. Using the alternatives offer winemakers a way to save money by steering clear of oak casks, but newer alternatives are being looked at now to avoid the stigma about chips.
