New York is suddenly awash in frozen yogurt shops. With big chains like Red Mango and Pinkberry, is there room for an independent? The owners of Oko think so. A $5 fro-yo costs about $1 to make, not counting staff expenses, rent and the payments on the expensive dispensing machine. One benefit of a crowded field: The big guys are spending a lot to promote yogurt as healthy and cool, and that helps everybody.
