Survey shows baker interest in local wheat

A survey of bakers in western Washington State finds interest in using locally grown wheat, as long as the quality and supply are assured. "Because grains are so important in human and livestock diets and their production represents a significant amount of agricultural land use, a shift toward localization of grain production and processing could have important economic, social and environmental benefits," the report notes.
