Eric Ripert dishes on changes at Le Bernardin

New York City institution Le Bernardin has won annual acclaim from Zagat reviewers and multiple Michelin stars, but it was time for a change, said chef and co-owner Eric Ripert. The chef recently finished a total renovation aimed at better meeting demand from a younger clientele, and said, "In New York if you stand still, you will be passed by."
