Gluten-free products on the rise

Food manufacturers, restaurants and grocers including Wal-Mart Stores and Whole Foods Market Inc. are offering more wheat, barley and rye-free products to accommodate consumers' gluten concerns. Gluten-free product demand grew initially to accommodate celiacs who have allergic reactions to the protein, but others are adopting gluten-free diets as a weight loss plan, while still others say it offers hope for some skin-problem sufferers.
