Goats are the new cows in Wisconsin

Wisconsin is urging dairy farmers to expand their herds of cows to include goats while current goat farmers are increasing their herds. A new Lancaster, Mo., goat cheese factory is influencing much of the change, and Woolwich Dairy, Canada's largest goat-cheese maker, is constructing its first U.S. cheese plant and American headquarters in the cheese state.
