10 years in, Uplands adds a 2nd cheese

Uplands Cheese, in Dodgeville, Wis., is introducing a soft French-style cheese called Rush Creek Reserve, 10 years after launching its only other cheese, Pleasant Ridge Reserve. "The hope is they will both express our farm," said cheese maker Andy Hatch. "Pleasant Ridge is dry and aged for a long time; Rush Creek is young and moist. It's two different ways to express the same terroir."
