Former Fleming's chef aims to help homeless learn restaurant skills

Australia native Brett Swayn was living in a Nashville, Tenn., rescue mission when a Fleming's Steakhouse staff member offered him a prep-cook job. Swayn, who eventually worked his way up to chef, left Fleming's recently to create a catering company that aims to create similar opportunities for the city's homeless men.
