San Diego's fine-dining chefs will display their beer and food pairing knowledge at this weekend's Beer Garden, the closing event of San Diego Beer Week where diners can eat 12 courses while sipping local brews. "I start with a lot of field research," said Kyle Bergman, the chef at La Valencia Hotel's Mediterranean Room, who visits breweries before making his menu. "Then I ask myself, what sort of flavors do the beers bring to the forefront of your mind? If it's a lighter-bodied beer, perhaps a fish or poultry item. If it’s heavier -- an IPA or an amber, maybe -- I might go with a braised dish."
