Food-ingredient suppliers search for fat, sugar alternatives

Food companies these days spend heavily on research to cut fat from products while keeping food flavor. To replace ingredients without making customers notice the difference, companies are increasingly turning to hydrocolloids. "Research and development has focused more on differentiation than on totally new products,” says Dennis Seisun, owner of the hydrocolloid consulting firm IMR International.
