Charles Biondolillo was ready to take over running Roma in North Arlington, N.J., 12 years ago after growing up in the casual Italian restaurant his dad Pietro opened in 1973. Biondolillo is one of three restaurateurs profiled in this story about about the next generation taking over the family business. "I was a baby washing dishes and making pizzas.
