Companies anticipate salt-free food trend

Food companies such as Campbell Soup Co. and Del Monte are continuing to explore low-sodium and unsalted food product markets, although a recent Datamonitor report showed only a small amount of growth in the low-sodium foods category since 2002. Food companies anticipate that the aging of the baby boomer segment will fuel interest in low-salt or no-salt foods, and are seeking acceptable salt substitutes.
