Makers of gelato and other premium ice creams are looking to capitalize on a trend of adults splurging on premium desserts with high-concept flavors, from peppermint bark to vodka-flavored Limoncello. The foodie culture is playing a big role in the shift to niche flavors, and gelato and sorbetto sales reached $113 million in the year ended Sept. 28, according to Spins. People "are willing to spend more money for a pint of gelato," said Ciao Bella Gelato spokeswoman Athena Kasvikis.
