Phoenix food trucks steer toward solid ground

Food trucks blossomed quickly in Phoenix after the coastal trend began moving inland a few years ago, and now some of the city's 60 mobile eateries are opening traditional bricks-and-mortar restaurants. For chef Michael Babcock, opening the Welcome Diner was a reprieve from the rigors of running a food truck, while Brad and Kat Moore see the Short Leash Hot Dogs' Sit.Stay restaurant as a natural extension of their two successful gourmet hot dog trucks.
