Nestle develops complex food interactions model

Scientists from the Nestle Research Center and the University of California have teamed up to formulate a mathematical model that can help explain how food structure is affected by the interaction between lipids and water. The model can be used to further enhance food components, such as texture, flavor and nutrient content, and allow development of more structured foods.
