Simplicity gives Nordic cuisine staying power

New Nordic cuisine, which mixes the region's local ingredients with modern techniques, has swept the culinary industry, but old and often simple Scandinavian cuisine is worth recognizing, writes Deena Prichep. Dense baked goods are scented and flavored with fresh spices such as cardamom and allspice while hearty stews and savory pasties offer warmth in the cold winter months.
