When November hits the Hamptons, eateries in the Long Island, N.Y., resort town either deal with drastically reduced business, cut back to weekends only or close altogether. Southfork Kitchen's Bruce Buschel has another plan: He'll scout Brooklyn, N.Y., neighborhoods this winter for the right spot to open a second eatery that's less at the mercy of the seasons.
