Gluten-free options debut on more Wis. schools' menus

More schools in Wisconsin are offering gluten-free options during lunch, says Linda Krueger, a nutrition education consultant for the state's Department of Public Instruction. The increase in schools serving such options comes as schools try to meet the needs of students with celiac disease. Some school districts post gluten-free options online along with the regular lunch menu and take special precautions when preparing meals to help avoid cross contamination.
