Cargill launching lecithin from sunflower

Cargill expects its new lecithin from sunflower to be popular with manufacturers pursuing allergen-free claims. Until now, all of Cargill's lecithin had been made from soy, which, unlike the sunflower product, had to be labeled as an allergen.
