Many factors influence dairy flavors

Flavor experts discuss factors that must be considered when flavoring dairy products, including levels of fat and acidity. For example, fruit flavors do well in yogurt, but "it’s challenging to get fruit flavors to pop in a low-acid beverage like milk," said Marie Cummings, manager of food applications and product development at David Michael & Co.
