Chelators could help wines further improve with age

Chelation compounds may help prevent oxidation in wine, keeping a favorite bottle pristine for a little longer, according to food scientists at Penn State. Oxidation can kill a wine's aroma and fruit textures and lead to discoloration. Some chelation compounds are safe for consumption, but they would need to be approved for winemaking, said doctoral candidate Gal Kreitman.
