Hip eateries add adjacent bars for waiting patrons

Many popular restaurants across Brooklyn, N.Y., have added nearby bars where patrons can sit, sip and nibble appetizers while they wait for a table. "It makes a lot of sense to have a place that's literally next door to send people, where they can have a cocktail, a beer and maybe a snack while they're waiting," said Andy Ricker, the owner of Pok Pok and Whiskey Soda Lounge. "If people are going to go somewhere and wait and drink booze, we want them to do it at a place that we reap the profits from."
