Quickserve soup sales soar amid search for healthy comfort food

U.S. restaurants served 1.6 billion servings of soup in the 12-month period ending in July, up 3% from the previous year, and quickserve chains led the growth with an 8% increase, according to NPD Group. Diners increasingly see soup as less of a side dish and more of a healthy, comfort food meal, said Eric Ersher, founder and CEO of Michigan-based soup chain Zoup, which has grown from 28 to 57 stores since 2010 and projects 2013 revenue of $32 million.
