Chef Chris Schlesinger has always been passionate about cooking with fire. He was, after all, one of the first East Coast chefs to add a live fire grill to his restaurant. But now, Schlesinger is interested in cooking with fire in an unlikely place: underground. This ancient cooking method may be laborious, but the hours the beans, pork and maple syrup spend underground reveal maximum flavor that is worth the work.
