Resorts in the Phoenix and Scottsdale, Ariz., areas are dropping their familiar formal dining rooms in favor of trendier, more casual eateries designed for a younger generation of travelers. Traditional dishes, such as beef Wellington, and dress codes are being cast aside for Kobe steak, less-stuffy dining rooms and big-name chefs.
