Hershey filed a patent for its liquid-liquid partition chromatography method for purifying and detecting levels of cocoa flavanols and procyanidins. The method, called centrifugal partition chromatography, improves on the more commonly used functional assays like oxygen radical absorbance capacity. Flavonoids have health and well-being benefits but they have been difficult to separate. "The liquid-liquid system avoids the common problems in purifying flavonoids and flavan-3-ols, as they are prone to adhere to solid supports," Hershey said in its patent application.
