Even savory Moroccan food has a foundation of sweetness to it, says Anass Sentissi, owner of the recently opened Saffron Café in Indianapolis. The cuisine, which features a simmered stew called tagine as well as couscous and spices including cinnamon and saffron, draws from many influences, including Spain and the Middle East.
