Chef to update historic hotel's menu with simple, fresh flavors

Josh Bettis' first order of business as the new executive chef at The Brown Hotel in Louisville, Ky.: Partner up with local farmers and pay them to plant and care for carefully selected menu items. Bettis wants to transform the hotel's menu -- minus its signature offering, the historic Hot Brown sandwich -- to offer healthier, fresher meals.
