Strict requirements keep many eateries from 'gluten-free' guarantees

Restaurants want to cater to patrons with celiac disease and other gluten-intolerant diners, but stricter Food and Drug Administration labeling rules and the high likelihood of cross-contamination in the kitchen have many hanging back. California Pizza Kitchen has created an elaborate preparation system to guarantee "gluten-free" options, while other chains are going with less strict "gluten-friendly" labels and warnings that the final product many not be completely gluten-free.
