Schools welcome flexibility under relaxed school-meal standards

In a North Dakota school district, nutrition professionals say changes made to meals Monday under relaxed U.S. Department of Agriculture guidelines went mostly unnoticed by students. While schools always have focused on serving nutritious meals, students now will be allowed more add-ons, such as cheese for their salads or a bread stick with their chili. "Serving a casserole and adding that extra whole-grain bread, that does make the kids feel fuller," said foodservice director Shelley Mack.
