Chef Julien Boscus' favorite ways to enjoy oysters

Julien Boscus, the new head chef at Paris' Les Climats restaurant, is smitten with fresh oysters and although he enjoys them year around, the holiday season is his favorite time to enjoy them. Boscus recommends eating fresh oysters with a pat of semi-salted butter and marinated sliced shallots on toasted bread, or serving them with cold sides such as cauliflower, cucumber or green apple.
