Aromatics the future of premium chocolate

Much like wine, premium chocolate will use cocoa blends to give it aromatic notes, according to Cemoi's Quality and R&D Manager Jean-Marc Laurens. "We are working on aromatic personalization. We are certain that the future is a more aromatic chocolate, more personalized, a bit like the evolution of the world of wine," Laurens said, who also added that he sees the market splitting into two: standardized chocolate with lower chocolate quality and a high-end market with better quality and added value.
