Fast-casual concepts take a bigger bite of the market

Fast-casual chains were largely spared from the pain of the recession as concepts such as Panera and Chipotle appealed to consumers in search of fresh, affordable fare and distinctive decor. While still only 6% of the overall restaurant industry, the fast-casual segment tripled its market share in the past decade, pushing quickservice chains to upgrade menus and decor to stay competitive.
