Australia's makers of fine wine are beginning to appreciate the notion of terroir, the understanding that soil, climate and sun are central to the character of wine. "Thirty years ago the winemaker thought his job started in the winery," said John Duval, who runs John Duval Wines. "Now we spend more time in the vineyard."
