Hidden ingredients and less-than-stringent kitchen practices mean that some restaurant menu items advertised as gluten-free may in fact exceed the FDA's limit of 20 parts per million of gluten, Sara Novak writes. Several restaurants have been found to have misrepresented gluten-free dishes.
