Canada to set new cheese-composition standards in 2008

The Canadian government is expected to implement new federal standards regarding the composition of cheese that will allow for the use of additional milk products, such as whey, butter and other milk solids, in cheese-making. The amendments, which will also specify which ingredients can be used in "aged" cheddars and other varieties, are set to take effect late next year.
