The first white wines of the 2017 harvest are about to be shipped, but some of them won't really be at their best until they get a bit more aging time in the bottle, Dan Berger writes. Adding more time is particularly helpful for such varieties as chardonnay, sauvignon blanc, Rhone blends and pinot gris, he writes.
