Why the grill isn't great for every kind of food

Uneven heating and lost fat are the main reasons why chefs recommend steering clear of the grill when it comes to cooking pizza, filet mignon, burgers and fish. "Burgers should be cooked on a plancha, full stop," said chef Daniel Herget of Little Octopus in Nashville, Tenn., who explained that cooking on a solid surface allows burgers to develop a caramelized crust.
