    Grain products with the Whole Grain Stamp icon on the package had more fiber and less trans fat but also contained greater amounts of sugar and calories than did those without the stamp, according to research from the Harvard School of Public Health. The study, published online in the journal Public Health Nutrition, evaluated several guidelines for grains and said the American Heart Association standard, which uses a ratio of total carbohydrates to fiber, was the best standard for overall healthfulness.   • Researchers show why taste of white bread is favored: Whole-wheat bread is healthier but the chemical makeup of white bread makes it the taste favorite, University of Minnesota researchers say. Their study in the Journal of Agricultural and Food Chemistry found that ferulic acid in wheat bran inhibits a molecule that makes the smell associated with white bread, and that the process of making wheat bread can leave it with a bitter taste.   • Report: 2.2 billion tons of food is wasted each year
    About half of the 4.4 billion tons of food produced annually isn't eaten because of inefficient harvesting, storage and transportation, or it is wasted by consumers and markets, a report by the Institution of Mechanical Engineers says. "This level of wastage is a tragedy that cannot continue if we are to succeed in the challenge of sustainably meeting our future food demands," the report says.     Only 39% of students at four-year colleges and universities in the U.S. had physical education and exercise requirements in 2012, compared with 97% in 1920, according to a study in the journal Research Quarterly for Exercise and Sport. "It is alarming to see four-year institutions following the path that K-12 schools have already gone down, eliminating exercise as part of the curriculum even as obesity rates climb," said lead author Brad Cardinal.
