Chefs are in the know about parsnips
People tend to either love or hate parsnips, if they know what they are, but there are few chefs who don't appreciate their sweet, distinct flavor, according to one writer. "I love them," says Barton Seaver, chef at Hook in the Georgetown neighborhood of Washington, D.C. "The texture, the flavor, the aroma, the look."
