Oolong teas, semi-oxidized tea varieties that fall between the categories of green and black teas, have not yet captured the attention of most U.S. consumers. Although tea experts love the oolongs, some say their strange name and lack of exposure have hampered sales. The tea also benefits from multiple infusions in a small clay pot.
