Sustainable-restaurant trend gains foothold in London

London has found itself at the center of the sustainable-restaurant trend, as diverse issues such as animal rights, energy conservation and other environmental concerns coalesce into a single movement. Chefs at upscale restaurants there are considered pioneers of the movement, as they install sub-meters to save energy, cut back on exhausted food supplies such as cod and work solely with suppliers of locally grown food.
