Researchers say a huge increase in the amount of corn syrup in American diets over the past 100 years may explain the dramatic rise in cases of type 2 diabetes in recent decades. In trying to break down the noted increase in calorie intake in recent years, researchers found in the past 20 years, the increase has almost exclusively consisted of carbohydrates, and they estimate that corn syrup consumption makes up about 10% of total calorie consumption. Many studies link high intake of refined carbohydrates and other high-glycemic foods with diabetes.
