Industry leaders and academics last week at a food technology conference claimed that food manufacturers and retailers play a critical role in helping Americans curb obesity. A Purdue University professor of foods and nutrition who sat on the USDA panel that drew up the 2005 Dietary Guidelines and attended the conference said, "I've been very impressed [with] how well food companies are dealing with trans fats, portion sizes and getting portion sizes down."
