The American appetite for artisan cheese is growing, and in order to ensure local cheese makers the ability to produce such copious amounts, Maine, a big producer of specialty cheeses, has created the Maine Micro-Dairy Cooperative. It is the job of this group to make sure that cheese producers have enough sheep, goat and cow's milk needed to make cheese including brie, Camembert and cheddar.
